As we bid adieu to the scorching summer days and welcome the crisp embrace of autumn, there's a flavor-packed treat from the season that I simply can't wait to share with you. It's a symphony of flavors, an unexpected twist on a classic favorite, and a delightful farewell to summer's sweetest fruit. 🍉🍅🌿


What You'll need:

Watermelon, Cocktail Tomatoes, Nut's of your Choice, Olive Oil, Salt, Pepper and Balsamic Glaze.


Here's how the magic unfolds:


Watermelon Wonder: Start with a thick, juicy watermelon square as your canvas. The vibrant colors alone will make your taste buds tingle with anticipation.

Tomato Tango: Next, we add a generous dollop of tomato confit, a slow-cooked masterpiece that's rich, tangy, and bursting with umami. To make the confit, simply cut tomatoes in half, pour a little olive oil over them, season with salt and pepper (add some herbs if you like) and slow roast them in the oven at 250 F for 2 1/2 hours. This delicious goodness goes also well on bread for an appetizer, you can stir it into pasta or cooked grains, use it as topping on hummus or with chicken, meat or fish or enjoy it with a cheese of your choice. It's so stinking yummy!
