Fig and Goat Cheese Salad

Today, I'm excited to share with you one of my absolute favorites—the oh so yummy Fig and Goat Cheese Salad that's a symphony of sweet and tangy flavors. This delightful salad is not only delicious but also incredibly simple to prepare.
The Secret to Luscious Figs: Plumping Them Up
Before we dive into the recipe, let's talk about plumping up dried fruit, a technique that enhances both the texture and flavor. Plumping simply means soaking dried fruit in liquid, and it works wonders. You can use water, but why not elevate the flavor further? Try fruit juice, rum, bourbon, or brandy for an extra punch of yumminess.
Now, for the Fig and Goat Cheese Salad:
Ingredients:
Mixed greens (use whatever you have on hand)
Dried or fresh figs (plumped up, if dried)
Toasted walnut pieces or pumpkin seeds
Crumbled goat cheese
For the Vinaigrette: Equal amounts of quality olive oil and balsamic glaze/vinegar (2-3 Tbsp each), finely minced shallots and salt/pepper to taste. If you like it less tangy, use less balsamic glaze/vinegar.
Assembly:
Start with a generous bed of mixed greens. It's like a canvas waiting for the masterpiece.
Layer on the plumped figs, a handful of toasted walnut pieces, and a generous sprinkling of crumbled goat cheese. The combination of textures and flavors is a delight for your taste buds.
To finish, drizzle this goodness with a simple balsamic vinaigrette. Combine the Vinaigrette ingredients in a small bowl, whisk together, taste and adjust to your liking and voila, you've got a vinaigrette that enhances the flavors of the salad without overpowering them.
It's amazing how simple ingredients can come together to create something extraordinary. Let your taste buds dance with this Fig and Goat Cheese Salad!
